Hailing for Thailand, this dish is a more filling and wholesome alternative to Roti Prata. An amalgamation of barbecue and steamboat, it is sure to satisfy your taste buds!

Step 1: Choose Your Meat, Vegetables and Seafood
When you reach a Mookata restaurant, you can opt for your choice of meat or seafood. While Mookata is traditionally enjoyed with pork and prawns in Thailand, most Mookata restaurants in Singapore offer a broader range of poultry, red meat and seafood.
You can find almost anything from hot dogs, luncheon meat, scallops, sea urchin balls and even abalone slices!
Step 2: Cook the Pork Fat
Instead of regular margarine or oil used in normal barbecues, Mookata uses pork fat. Many diners merely rub the pork fat on the surface of the grill, but this isn’t the best way to enjoy the barbecue. Instead, simply leave some of the pork fat on the surface of the grill and let it melt.
It will eventually give you a smooth and oily surface to grill your meat! Using this method helps you spread the lard evenly on the grill and also gives you a stronger and more heavenly taste.
Let the pork lard drip into the soup for a meatier and most sumptuous broth!
Step 3: Cook Your Meat in the Soup
While waiting for the pork fat to melt, toss in some of your meat, vegetables and seafood in the moat surrounding the grill. Unlike traditional Mookata from Thailand that use plain water, Mookata shops in Singapore use a lightly flavoured broth to give the dish more flavour.
Seafood, meat and vegetables typically take longer to cook in soup than on the grill, so make sure you toss them in the soup first!
Step 4: Grill Meat in Pork Fat
This is the fun part!
After the pork fat has completely melted, place the meat and seafood evenly on the grill. Try to avoid flipping the items too often. Also, it is not recommended to cook vegetables on the grill, so save your leafy greens for the Mookata soup.
If you find that the grill is no longer sticky, simply toss a cube of pork lard or two and wait for it to melt before cooking the meat and seafood again!
